Ginger, honey and lemon

I am sick, and I hate being sick. I don't often succumb to colds, but when I do it's awful. I'll spare you the details. What I will share is this recipe for my cold-fighting tea. It's warm, powerful and delicious and it does make you feel better. Especially when served in a beautiful china teacup.

Cold-fighting tea

  • 1 inch piece of ginger
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp honey
  • 500ml water

In a small saucepan, boil the water. I cheat and boil the kettle and pour it into the saucepan. Finely grate the ginger into the boiling water, and let boil for 15 minutes. Turn off the heat, and add honey and lemon. Let simmer very low for 10 mins. Strain into suitably cheery cup.

Makes 2 cups

You can adjust the amount of honey or lemon depending on your taste. I like it quite strong.
